Ula stands beside me in the cafe kitchen, helping me dice the fruit, shred the carrots, mash the potatoes with cream and all those farm eggs, and blend the nuts and tallow. In my estimation, there is no culinary creation more mystifying than the traditional Christmas pudding. And for all it’s disparate ingredients, there is nothing more delicious to my 11-year-old each holiday. As she helps me blend it all together, she looks up, a wondrous conclusion on her face:
“If I eat Christmas pudding, I’ve eaten a complete meal: proteins, fats, vegetables, carbohydrates, ….Mom! If I eat Christmas pudding, I don’t have to eat Christmas dinner first!”
I’ve noticed many of you feel the same way, streaming in each year for a helping of traditional pudding and the real eggnog. So this week, for the special, as we do only once each year, you can have just dessert.
Or you can have a proper meal, which is what I recommend!
