We serve this meatloaf in our cafe, and it’s unbelievably popular. The secret ingredient? MEAT.
1 whole onion, diced and sautéed ’til clear
1 pound ground beef
1 pound unseasoned ground pork (you can use a second pound of ground beef if you can’t find this)
1/2 cup potato flour
1 egg
1 tsp salt
1 tsp ground black pepper
Place all the above ingredients in a large bowl and mix to combine. Press into a 10X5 loaf pan and bake for one hour at 350 degrees.

I love meat loaf and have often enjoyed this beef-pork combination, but had never found the perfect binder-thickener. Potato flour sounds like a good idea, and I will try this.

Meat ain’t the only secret ingredient, it seems. What’s the red stuff on top? Good old Heinz ketchup? Ketchup & brown sugar glaze? Shannon Hayes’ Heavenly Secret Sauce?
