These end cuts don’t fry up in a pan like traditional bacon.

Here are just a few things you can do it:
– Dice & sauté. Use the meaty bits on top of a salad, and the fat in your vinaigrette.
– Sear chicken in it.
– Make Pasta Carbonara.
– Use it in split pea soup, baked beans, or cassoulet.
– Scramble it with eggs.
– Sauté seafood with it.
– Use as a base for a caramel sauce, then pour it over ice cream or popcorn.
– Dice & sauté. Use the liquified fat to make homemade mayo. Put it on a sandwich with the bits.
– Sear beef short ribs in it before braising (and hey! They’re on sale this week, too, 25% off!).
– Make potato soup.
– Dice & sauté. Use the fat in your favorite cornbread recipe, then add the bits to your batter.
– Add one half cup bacon fat to your best brownie recipe.
– Dice & sauté, then make home fried potatoes with it.
– Sauté some of Barbers’ fresh winter greens in it.
