Can’t make it to the cafe this #SapbushSaturday? Here’s how we’re making the Greek Lamb Bowl Special
Greek Lamb Bowls
Serves 4
Ground Lamb:
Onion onion, diced
2 cloves garlic, minced
2 Tbs olive oil
1 pound ground lamb
1 Tb dried parsley
1 tsp allspice
1/2 tsp cinnamon
1/2 tsp crushed red pepper
1/4 tsp ground ginger
salt and pepper to taste
1/4 cup fresh mint
8 oz feta, chèvre or Halloumi cheese
1 cup hummus
2 diced cucumbers
2 diced tomatoes
4 pita breads, cut into wedges
4 cups white rice cooked in one teaspoon ground turmeric
Saute the onions and garlic in the olive oil until the onions are clear. Add the ground lamb and sauté until cooked through. Stir in spices, then sprinkle with the fresh mint.
Fill each person’s bowl with a cup of the turmeric rice, then top with the cooked ground lamb, the tomatoes & cucumbers, the hummus & the cheese (at the cafe we fry the halloumi in olive oil before putting it on the bowls).
